BEANS
To keep beans from giving gas, soak beans in a large kettle of cold water three times the amount of the beans. Set the kettle on high heat and bring to a boil. Biol exactly 2 minutes. Remove from heat. Drain; add fresh water. let bean soak 4 to 10 hrs., chaening the water several times. Drain the beans, add triple their volume of fresh water and cook 1 1/2 hours in an open opt. Then follow your recipe. THis process will not change the taste, only the aftermath.

Most dried beans increase in volume and double their size when cooked. Mashing beans is a lot easier when the beans are HOT.
