GERMAN APPLE CAKE

2 large eggs
1 cup salad oil
2 cups sugar
2 cups sifted flour
1 teaspoon (tsp) cinnamon
1 teaspoon (tsp) vinalla
1 teaspoon (tsp) soda
1/2 teaspoon (tsp) salt
4 cups diced apples
1/2 to 1 cup chopped nuts

Beat eggs and salad oil 'til foamy. Add sugar, flour, cinnamon, vanilla, soda, salt. Mix well. Add diced apples and nut meats. Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 45 to 60 minutes.

Icing:

2 four ounce packages cream cheese (or 1 large package)
3 tablespoons (tbsp) melted butter
1 teaspoon (tsp) vanilla
1 and 1/2 cup confectioners' sugar (more if needed)

Soften cream cheese and mix with melted butter. Add vanilla. Mix in enough confectioner's sugar until of good spreading consistency. frost top of cake afer it has cooled.
