5 medium zucchini
1 tablespoon (tbsp) grated parmesan
2 tablespoon (tbsp) flour
1 teaspoon (tsp) salt
1/2 cup olive or vegetable oil
3 eggs, slighly beaten
1 clove garlic, minced
1/2 cup chopped parsley
1 teaspoon (tsp) pepper
1 teaspoon (tsp) pepper
Remove both ends of zucchini, do not peel. Press out water, after grating, medium to coarsely. Combine all ingredients, mixing with fok. Heat a small amount of oil in skillet, dropping a heaping tablespoon (tbsp) of the mix at a time, to fry until golden brown. Serve warm.
