Tips included in the Breads, Rolls, Biscuits and Crackers chapter of the 1984 Herron Island Cookbook.
- To heat bread in the oven, (or rolls or small loaves) put in regular brown paper bag. run water over the outside of the bag and put it into 350 to 400 degree oven for about 10 to 15 minutes.... not too long.
- Grease pans with butter rather than oil. Bread tends to stick to the oil. [Page 28]
- If there is high humidity, the dough will require 1 more cup of flour. [Page 28]
- Never use the same board to knead and slice bread on that you use to cut meat. The bacteria from the meat juices may contaminate your bread. [Page 28]
