Best-Ever Blueberry Muffins

Best-Ever Blueberry Muffins

1 and 1/2 cup all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup sugar
4 tbsp canola oil
1 egg beaten (large)
3/4 cup plus 2 tbsp milk
1 cup blueberries

Preheat over to 400. Line muffin pan with 10 paper muffin cups or spray with non-stick cooking spray. Sift the flour, baking powder and salt in a large bowl and stir in the sugar. In a separate bowl whisk together the oil, egg, and milk. Pour the wet ingredients over the dry ingredients and whisk until just blended. Add the blueberries and stir them in just enough to combine. Divide the batter evenly among the muffin cups. Bake muffins 18 to 24 minutes. Remove to wire rack to cool.

This was a quick recipe to mix up for a breakfast buffet at the office. It makes a nice presentation on the table. And who doesn\'t like blueberry muffins?
