Heat oven to 400 degrees.
Grease a muffin pan - this recipe will make 8 large muffins, so you might want to double it. (I never saw a person eat just one).
1 3/4 c. flour
1/2 c. shredded sharp cheddar cheese
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt (optional)
1/2 tsp. ground red peppers (the sort that comes with a pizza delivery)

3/4 c. milk
1 beaten egg
1/3 c. oil
Six slices of bacon fried until extra crisp, cooled, then snapped into small pieces.
Put dry ingredients into a bowl.
Make an indent in the middle. Pour wet ingredients into the hole. Add cheese and bacon. Stir but don't over stir. It will be very, very thick.
Put mix into muffin tin, filling nearly to the top.
Bake for about 20 minutes, checking ever so often. Muffins are done when a toothpick comes out clean.
Alice's Note: I have problems with my oven, so I don't cook my muffins the entire time at 400. Every cook probably knows this, but just saying, so you don't burn these incredibly delicious morning morsels!
