1 box angel hair pasta
1/2 jar crunchy peanut butter (use the medium size jar, not the gigantic sort purchased by Kindergarten moms).
Hot water (boiling)
Rice Vinegar to taste
Soy sauce
Sugar to taste
Crushed red peppers (the sort that come with delivery pizza) (use just a teaspoon, maybe two)
Shredded carrots (go easy on yourself and buy the pre-shredded carrots at Safeway - one bag will do)
Green onions - one bunch. Cut long ways (looks pretty and they sort of curl)
Cook the pasta and drain
In a bowl, put all the other ingredients except carrots and onions. Just splash in some soy sauce and rice vinegar and throw in a couple teaspoons of sugar. It will be sticky. Gradually add the boiling water until it becomes a workable sauce. Taste it and add more vinegar (which I almost always do) and more soy (which I do pretty much every time). You probably won't need more sugar and go easy with the crushed red peppers.
Mix this up so it is easy to stir and then add just enough water (boiling) so it can be poured onto the spaghetti noodles, carrots and green onions and tossed.
You will need to toss this for a bit of time. But it is worth the effort. If you find that it is just altogether too sticky and you are cursing my name under your breath, add a bit more hot water, soy sauce and rice vinegar. It will all turn out in the end.
This is unusual, filling, and can be a main dish. Sometimes I will serve it with shrimp or scallops.
