Carrot Bread

2 cups flour
2 tsp soda
2 tsp cinnamon
1/2 tsp salt
1 cup vegetable oil
2 tsp vanilla
2 cups grated raw carrots
1 and 1/2 cups sugar
1/2 cup dried ???
1/2 cup pecans
1/2 cup coconut
3 eggs

Mix dry ingredients together. Add ????, coconut and nuts. Add remaining ingredients and mix well. Pour into 3 greased 1 pound vegetable or fruit cans. (?????) I use ???? 2 little tin loaf pans. Let mixture stand 20 minutes. Bake in oven 350 degrees for 1 hour. Cool slightly and remove from cans. When cold, wrap and regrigerate, this is like cake. It keeps a long time in refrigerate and can be frozen.
