Carrot Cake

Cake:

1 cup sugar
1 cup canola oil
3 eggs
1/2 tsp salt
1 and 1/3 tsp baking soda
1 and 1/3 tsp baking powder
1 and 1/3 tsp cinnamon
1 and 1/3 cup flour
2 cups grated carrots
1/2 cup chopped walnuts

Combine sugar, oil; add eggs one at a time. Beat well after each egg. Sift flour and the rest of the dry ingredients together in a separate bowl. Add to egg mixture. Fold in carrots and walnuts. Grease 13”x9” pan. Bake 50 minutes – 300 F. Cool cake before icing.

Cream Cheese Icing

One 8 ounce package cream cheese
2 tbsp margarine
1 and 1/2 cup icing sugar
1 tsp vanilla

Mix together well until very smooth. Spread on cool cake.
