1 and 3/4 cups all-purpose flour
1 and 1/2 tsp baking powder
3/4 cup margarine or butter
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups shredded zucchini
1 cup coconut
3/4 cup chopped walnuts
1 recipe Cinnamon Frosting
Generously grease a 15x10x1-inch baking pan. Set aside.
In a small mixing bowl stir together flour and baking powder. Set aside.
In a larger mixer bowl beat margarine or butter with an electric mixer on medium speed for 30 seconds. Add sugars; beat till fluffy. Add eggs and vanilla; beat well. Stir in flour mixture. Stir in zucchini, coconut, and nuts. Spread evenly in prepared pan.
Bake in 350 oven about 30 minutes or till a toothpick inserted near center comes out clean. Cool completely in pan on a wire rack. Drizzle with Cinnamon Frosting. Cut into bars.
