2 large navel oranges
6 eggs
1 cup sugar
1 tsp baking powder
1 and 1/2 cups almonds, blanched and ground fine in blender
pinch of salt
Cover bottom of 9 inch round cake pan with kitchen parchment.
Drop oranges into a pot of boiling water and cook until very soft. Cut into and remove the stem and quarter each piece, discarding seeds. Place in bowl of electric blender and puree very fine.
Put eggs with sugar in large bowl of mixer. Beat until thick and creamy. Stir in almonds, salt and baking powder. Stir in pureed orange. Bake in 400 degree oven for one hour or nutl toothpick comes our clean. Serve with whipped cream.
