Frank's Carrot Cake
Mix Together:
1 cup oil
3 eggs
2 cups sugar
Then add:
2 cups flour
1 and 1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
2 cups grated carrots
1 cup drained crushed pineapple
1 cup chopped walnuts (optional)
Bake at 350 degrees for 40 to 45 minutes
FROSTING:
Mix Together:
1 box powdered sugar
3 ounces cream cheese
1/4 cup butter
3 tbsp milk
Just a little hint... I also put some of the left over pineapple on top of the frosting after I've spread it on the cake. Just a little pineapple goes a long way but it makes it taste better.
