A couple dozen oysters, fresh
Flour (4 heaping spoons)
2 eggs (whipped)
Cooking Oil
Panko
Dash of salt
Remove oysters from shell. (fun times) Click here for some tips on how to get at the oyster with out cutting your hand open and then breaking things when you throw the oyster shell.
Pre-Heat 1/4 inch of cooking oil to around 450 degrees. The oil should be just deep enough to cover half the oyster. Lay oysters on a paper towel and prepare three bowls, one with flour (add a dash of salt to flour), the next with 2 eggs and a bit of water, and the last with Panko. Pick up the oyster, dip in flour, then into the egg mix, then into the Panko. Set on a separate sheet of paper towel. Thus you are dipping the oysters in dry, wet, dry mixtures...
When the oil is ready, carefully drop the breaded oysters into the hot oil. Fry for four minutes or until lightly golden brown, then turn the oysters over. Fry for another two minutes. Remove to paper towel.
