Gateau

This made one large spring form pan and one small one (out of set of 3 springform pans), so you might want to 1/2 the recipe.

14 ounce (oz) Semisweet chocolate
7 ounce (oz) Butter
1 and 1/4 cup sugar

Use double boiler till melted, sugar incorporated. (I just used a regular pan and melted the mixture, stirring frequently)

Separate 14 eggs to yokes, add 1 Tablespoon of Vanilla and 2 Tablespoons Triple Sec.

Whip Whites to just peaks, DON'T OVER WHIP

Add Chocolate Mixture to yokes, mix. (Hand whip together)
fold in White (DON'T OVER FOLD)

Pour into spring form pan, cook at 250 degrees
Check at 2 or 2 1/2 hours. Run knife around edge when done. (Mine was done in 1 or 1 1/2 hours NOT 2 hours.)

Paper Edges and Bottom of Pan. (I didn't paper the bottom of pan or edges.)
