1/2 stick oleo (margarine or butter)
2 eggs
2 cups cornmeal
4 tsp baking soda
4 cups buttermilk
Mix together room temperature 1/2 stick oleo Margarine or butter) and 2 eggs, 3 cups cornmeal with 4 teaspoon soda mixed with a fork, and 4 cups buttermilk. Lightly mix buttermilk alternately with the cornmeal & baking soda, adding to the egg mixture.
Pour into a well greased cast iron skillet.
Bake at 360 for 20-30 minutes, test the center with a toothpick for doneness.
This is great with ham and beans for a simple meal that's delicious!
