One 1 and 1/2 lb salmon fillet (12 inch thick piece)
2 tsp garlic salt
3 Tbsp brown sugar
4 Tbsp butter cut into small pieces
1 small red onion thinly sliced
1 bottle (12 oz ) beer
Preheat grill for medium high direct heat.
Using aluminum foil, create an oblong cooking tray, approximately 13x8x2 inches. Watertight. Place salmon in center. Season with garlic salt and sprinkle with brown sugar. Dot with butter and top with onion slices.
Place tray on grill. Pour beer into tray to just below highest point of fillet. Cover with aluminum foil to envelop fish completely. Cover grill with lid. Grill about 8 min. Or till salmon just flakes.
