Ken's Potato Salad

8 baking potatoes
1/4 cup lemon juice
1/4 cup vegetable oil
1/2 sweet onion
4 hard-cooked eggs
2 celery stalks
3/4 cup mayonnaise
3 tablespoons cider vinegar
3 tablespoons sweet pickle relish
2 tablespoons mustard
salt
pepper
paprika

Peel and dice potatoes. Steam them in two batches until soft but not mushy (about 20 minutes). Stir lemon juice and oil together and microwave until warm. Add to potatoes and mix in gently. Salt to taste. Add finely chopped onion, coarsely chopped eggs, and finely chopped celery. Mix mayonnaise, vinegar, relish and mustard together. Add to potatoes and gently mix. Top with pepper and paprika and refrigerate.
