Lemon Blossoms

1 box yellow cake mix
1 small box Instant lemon pudding
4 eggs
3/4 cup oil

Glaze
1 box sifted powdered sugar
Lemon zest or lemon extract
1/3 cup lemon juice
3 Tablespoons water
3 Tablespoons of oil

Blend ingredients together, fill muffin pan 1/2 full. Bake at 350 degrees for 12 minutes.
While muffins are baking, mix glaze ingredients together.
Mix untill smooth. Dip cupcakes into the glaze while they are still warm, covering as much of the cupcake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat them. Place on a wire rack with wax paper underneath to catch drips. let glaze set thoroughly, about 1 hour. Makes 5 dozen.
