Mediterranean Summer Sub

1/2 cup hummus
1 small red onion, thinly sliced
2 ounces feta cheese, crumbled (1/2 cup)
24 spinach leaves
3 cups shredded roasted chicken (from deli rotisserie chicken)
6 soft hoagie or crusty submarine sandwich rolls (about 6 inches), split

Spread 1/2 cup hummus on cut sides of rolls. Layer with 1 small red onion, thinly sliced, 2 ounces of feta cheese, (1/2 cup), 24 spinach leaves and the chicken.
