1/8 tsp thyme
1/2 pound halibut or other white fish
2 tbsp vegetable oil
1 onion chopped
1 clove garlic crushed
3 tbsp flour
3 and 1/2 cup chicken broth
1 can corn undrained
1 pound cooked diced potatoes
Season fish with thyme and cook in hot oil over med heat till flakes. Remove from pan set aside. Add onion and garlic. Cook till tender. Stir in flour. Cook one minute. Stir in broth. Cook till thick. Stir in corn and potatoes.
Discard skin and bones from fish and add bite sized pieces. Heat thru. Stir in chopped parsley and green onions.
I would add a touch of Red pepper to spice it up a bit.
