2 cups graham crackers
1/4 cup sugar
1/3 cup butter or margarine
Filling
3 eggs
12 ounces cream cheese
1/2 tsp vanilla
Pinch of salt
1/4 cup sugar
Topping
3/4 pint sour cream
2 tbsp sugar
1 tsp vanilla
Make crust by combining the three ingredients. cover the bottom and sides of a nine inch spring form pan. Reserve extra crumbs for topping. Refrigerate.
In a mixer, combine the filling ingredients and blend until smooth. Pour into crust and bake in a 375 degree oven for 15 minutes. Remove and allow to rest for 15 minutes. Combine the topping ingredients and mix. Carefully spoon topping on cake and return to a 475 degree oven for 10 minutes. When cake has cooled, sprinkle the remaining crumbs on top and refrigerate until ready to serve.
