One 2 1/2 to 3 pound chicken, cut into serving sized pieces
1/4 cup water
1/4 cup vinegar
3 tbsp oil
1/2 cup chili sauce or catsup
3 tbsp Worcestershire sauce
1 tbsp dry mustard
Freshly ground black pepper
2 tbsp chopped onion (optional)
Combine all ingredients except chicken in a saucepan; simmer 10 minutes. Wash and dry chicken and place in a large baking pan. Pour half of the barbecue sauce over chicken and bake at 350 degrees, uncovered, for 50 to 60 minutes, basting with remaining sauce every 15 minutes.
Or, chicken may be immersed in sauce, then removed and cook over charcoal, basting frequently.
