Puffy French Toast

1 cup flour
1 and 1/2 teasp. sugar
1 and 1/2 teasp. baking powder
Dash salt
1/4 teasp. cinnamon
1 cup milk
1 egg, beaten
Frying oil

Sift together dry ingredients. Blend egg and milk. Add to flour mixture and beat smooth.

Dip bread slices into batter, turning to coat both sides evenly. Fry in preheated 375 deg. deep fat fryer about 2 minutes on both sides. Drain on paper towel and serve hot.

Sandra's Notes:

I have made this several times and never used a deep fat fryer; just a skillet with 1/4 inch hot oil seems to work fine.
