4 eggs
3 c. sugar
1 c. oil
1/3 c. water
2 c. pumpkin (I used a 15 oz. Can and called it good)
3 and 1/2 c. flour (I mixed Prairie Gold, Bronze Chief and all purpose)
2 tsp. Baking soda
1 and 1/2 tsp. Salt
1 and 1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
1 and 1/2 c. chopped nuts optional ( I used 1 cup of chopped Walnuts)
In large bowl mix all dry ingredients except nuts. In separate bowl, mix eggs, oil and water and pumpkin.
In large bowl with dry ingredients, make well in center. Pour wet ingredients into center well and slowly incorporate the dry into the wet. (best to use wooden spoon) Only mix until all dry ingredients are softened. Add chopped nuts and mix until blended.
Grease muffin tin, or bread pans. (will make 8 small gift loaves or about 24 muffins). Bake at 350° for approximately 35 minutes.
