2 eggs
1 cup sugar
3 tbsp flour
Unbaked pie shell
1/2 tsp salt
3/4 cup cream
2 cup rhubarb
Beat eggs, add sugar, four and salt, beat. Add rhubarb to cream, mix with egg mixture, pour into pie shell. Bake until mixture thickens, about 1 hour (usually more). Test with knife, should come out clean and dry (like with custard).
Add extra fruit if not using fresh rhubarb or if you want to just because it's good. Strawberries are delicious, add about a cup if desired. Delicious served with vanilla ice cream. Bake at 400 degrees for about 1 hour. Ovens may vary so test before 1 hour.
