Sausage Gravy

1 tbsp butter
1 small white onion, chopped
1 pound sausage meat, removed from casing
2 tbsp all-purpose flour
1 and 1/2 cups milk

In a skillet over medium-heat, melt butter. Saute onions, about 5 minutes. Add sausage and cook until the fat has rendered and the meat is lightly browned, about 8 minutes.

Add flour and cook, stirring, 1 minute. Add milk and stir until the gravy thickens, about 2-3 minutes. Adjust the consistency of the gravy with milk if desired. Serve over biscuits.
