3 Eggs
1 cup raisins
1 tsp vanilla extract
1 cup butter
1 cup brown sugar
1 cup white sugar
2 and 1/2 cups flour
1 tsp salt
1 tsp ground cinnamon
2 tsp baking soda
2 cups oatmeal
3/4 cup chopped pecans
Combine 3 well beaten eggs, 1 cup raisins and 1 teaspoon vanilla extract.
Let stand for one hour on counter, covered with plastic wrap.
Cream together 1 cup butter, 1 cup brown sugar, 1 cup white sugar
Add 2 and 1/2 cups flour, 1 teaspoon salt, 1 teaspoon ground cinnamon and 2 teaspoons baking soda
mix well
blend into egg-raisin mixture
Add 2 cups oatmeal (can substitute 1/2 cup wheat germ for a more healthy cookie and 3/4 cup chopped pecans)
Mix, dough will be stiff
Drop by heaping teaspoons onto ungreased cookie sheet, Bake at 350 degrees for 10 to 12 minutes.
Unused portions freeze nicely, I save the cellophane from cereal boxes to roll the dough for later use.
