Water-Whip Pie Crust

9 inch - 2 crust pie          9 inch shell
3/4 cupShortening1/2 cup plus 1 tbsp
1/4 cupBoiling Water3 tbsp
1 tbspMilk1 tsp
2 cupsSifted Flour1 and 1/4 cup
1 tspSalt1/2 tsp

Measure shortening in bowl. Add boiling water and milk. Use fork to break up shortening. Tilt bowl and with rapid cross-the-bowl strokes, whip until it looks like whipped cream.

Sift flour and salt in; mix with fork until dough cleans sides of bowl. With hands, work to smooth dough. Roll dough out between sheets of waxed paper. For shell, prick with fork; bake in 450 degrees oven 14 to 19 minutes.
