3 Eggs
2 cups sugar
1 cup vegetable oil
3 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tbsp cinnamon
1/2 cup milk
1 tbsp vanilla
2 cups grated unpeeled zucchini
1/2 cup chopped nuts (walnuts)
Blend eggs, sugar and oil. Sift together dry ingredients. Add flour mixture alternately with milk and vanilla. Fold in zucchini and nuts. Bake in two greased 9 x 5 x 3 inch loaf pans. In a 350 oven for 60 to 65 minutes.
Serves: Makes two loaves
