3 cups grated zucchini
1 egg
1/2 cup flour
1 tsp baking powder
salt and pepper taste
Mix all ingredients and cook in a hot, buttered, frying pan like pancakes. Serve hot sprinkled with parmesan cheese.
Variations: Add minced garlic, or mushrooms, or chopped onions ... could use bisquick instead of flour and baking powder. If mix is too thin, increase flour (or bisquick).
