Homemade Mayonnaise

1 egg
1/2 tsp salt
3 tbsp vinegar or lemon juice
1 tsp prepared mustard
1 tsp sugar
1 cup oil

Blend together egg, mustard, salt, sugar, vinegar and 1/2 of the oil in electric blender on low speed until smooth. Continue blending while adding remaining oil very slowly in a steady stream into the center of the egg mixture. Store covered, in the fridge.

Yield: About 2 cups.

Libba's Note: If the mayonnaise curdles, blend 1 egg in a clean electric blender and gradually pour the curdled mayonnaise back while blending at high speed.
