2 medium potatoes, peeled, cut lengthwise in 6 pieces
3 medium carrots, cut in half then to 4 pieces
10 green beans, cut in half (optional)
6 to 8 mushrooms, sliced
1 medium onion, sliced 1/4 inch slices
1 green pepper, sliced in 1/4 inch strips
2 Tbsp good oil
6 cloves garlic, chopped
1/2 cup broth or meat stock
salt and pepper to taste
Put oil into frying pan on medium heat. Add potatoes stirring around in oil to coat. Add other veggies, except garlic. Stir them around to coat them with the oil. Add stock or broth. Add the garlic. Stir around. Cover and let cook on low to medium for aprox. 10 minutes, stirring occasionally.
I like to make this recipe in heavy pan after I have cooked pork chops for dinner. I remove the chops and folllow the above recipe only using warm water instead of meat stock. Spaghetti squash is a good vegetable to serve, steamed, with the above.
