Vegetables Section
Recipes listed in order they appeared in the 1984 Herron Island Cookbook. The Vegetables chapter started on page 204 and continued to page 214.
Tips included in the Vegetables chapter of the 1984 Herron Island Cookbook.
- Bake tomatoes, stuffed green peppers, or apples in well-greased muffin pan. they will keep their shape better and be more attractive when served.
- To remove corn silks, dampen a paper towel and brush downwards on cob. All strands should come off.
- To make onion juice: cut a slice off the onion, then squeeze the larger part of the onion as you would an orange.
- To keep a whole onion intact when cooking: once peeled, make an X about 1/2 inch deep at the root end with a small, sharp knife.
- To retain most of the nutrients in vegetables, prepare them in the following manner.
- Wash vegetables quickly in cold water. Do not soak your vegetables. you lose many nutrients also when you peel them...it's better just to scrub them thoroughly.
- Chill vegetables quickly. When shopping, take a small cooler to put them in.
- Chop or slice veggies when you are ready to use them...not a half hour ahead of time. If you are going to eat them raw, coat with oil to block the exposure to the oxygen.
